Christine Ruch's Fresh Thymes Eatery
has been 20 years in the making. Her first restaurant job was as a
hostess at a fine dining establishment in Scottsdale, AZ while in
college. At the end of her first shift, 19 years old and her feet
killing her, Christine was handed a glass of wine by the proprietor
and took in the romantic mood sitting at the bar with her
colleagues. She thought, "this is totally where I
belong."
Christine's passion for cooking though goes all the way
back to her early childhood. "I've been cooking my whole life,
since I was old enough to see over the counter! My dog was my first
customer: if we didn't get sick, the recipe was a success!"
Her life-long love for cooking is now expressed in the good, clean,
delicious food on the offing at Fresh Thymes Eatery
in Boulder.
Diagnosed with celiac disease eight years ago, and also
living with multiple sclerosis (MS), Christine was disappointed
with the idea that having food allergies must mean a person doesn't
like food. She not only loves amazing food, she knows first-hand
that healthy, nutrient dense foods are medicine. Though she doesn't
talk much publicly about it, Christine is convinced that her diet
is what allows her to be medication and wheel chair free. All of
this through amazing food!
Her vision was to create an entirely gluten-free
restaurant that provides delicious, satisfying delights at price
points that are accessible to the community every day. Ethical,
allergen friendly, affordable and in a casual environment, Fresh Thymes'
menu has something for everybody - whether spicy natural chicken
wings, an amazing, not-to-miss burger, awesome kale salad or
indulgent cakes, cookies and chocolates, it's no wonder that her
restaurant is appealing to newcomers and regulars alike.
With a profound commitment to food sourcing and to the
quality and integrity of her offerings, Christine loves that she
lives in a community that is at the forefront of the natural foods
movement, and envisions that natural, healthy cuisine will be in
the mainstream across America in the next 5-7 years as the realities
and consequences of industrial agriculture become more understood.
She foresees a future in which natural food isn't exclusive, but is
simply the way we eat in our society.
Christine's favorite cuisine is Latin American. The rich
heritage, intense flavors, diverse and naturally allergen free
foods are a source of inspiration for her recipes. "Beneath
the blond hair and blue eyes," she says, "I'm really a
