In an effort to keep our customers connected to a community of
high-quality foods straight from the SOURCE, we bring a feature product
to the table, to share with you each week. Whether this is a
product that you already carry or something new to consider, this
allows us to share the stories behind the sustainable products that we
all love and enjoy. We invite you to share this information among
your retail/restaurant teams and with your customers, so that together

Cappello's
Gluten Free -
Grain Free Goods
We tip our hats
off to the excellent taste and texture of Cappello's gluten
free, grain free, pastas and cookie dough. Cappello's was co-founded in
Colorado just three years ago by friends Stacey Marcellus and Benjamin
Frohlichstein. With the mission "to provide fresh, uniquely
delicious options for gourmet food-lovers, healthy eaters and people
with dietary restrictions;" this Paleo friendly line of products
also aligns with eating styles void of gluten and dairy.
Cappello's line of
almond flour pastas includes fettuccine, gnocchi, lasagna and bulk
ravioli sheets. This fresh gluten free pasta heats incredibly fast,
with the fettuccine ready after a quick 45 seconds in boiling water.
That is sure to keep food moving on your lines!
"Ravioli" sheets need not limit you to that singular entree
item. Let your creativity soar. Fresh pasta sheets can be sculpted into
manicotti, enchiladas, dumplings - whatever you are drawn to stuff,
roll and punch out. Prepared in large batches, items can easily be
portioned, frozen and heated to order.
From a retail perspective, the unique designs of this contrasting black
and white southwest inspired packaging will catch consumers' eyes,
popping out against the sea of colors often found in refrigerated
cases. With a discerning eye, you will find each product SKU to have
it's own special patterned design. The sturdy retail packaging is very
reusable, being even dishwasher and microwave safe.
We sampled Cappello's gluten
free, grain free, fettuccine below, dressed up with Chef Daniel Asher's
sunflower arugula pesto
tossed with Boulder Natural Meats
chicken and Sun Valley Farms grape tomatoes. Let's just say, it
did not disappoint!
In our eyes,
dinner deserves a sweet ending. Cappello's has made
this possible with their fresh chocolate chip cookie dough. Ben and
Stacey teamed up with Primal Palate to
develop this sinful, yet nutrient dense, low glycemic treat.
Besides being gluten free and grain free, this cookie dough is also
vegan - which means there is no harm in diving right in and enjoying
the raw dough. Use the product as-is (in it's raw form) in ice creams,
or bake-to-order and offer warm cookies to your customers.
