Cows Gone Coconut
(originally called "Over the Moo") was started in 2008 by
Lindsay Karson. Lindsay discovered she could no longer tolerate
many foods, including dairy products, and was driven to develop her own
alternatives. She began handing out pints of her non-dairy frozen
dessert concoction to her yoga students and the overwhelming response
drove her to begin selling them next at the Denver Farmers Market.

The name "Cows Gone Coconut"
was decided upon by Lindsay, her sister Lisa (a theatre major), and
brother-in-law Zac After crawling along the floor, mooing like
cows and laughing hysterically in a skit to portray the name to their
parents, it remains a very memorable experience to this day, and
reminds us to all be a little nuts in life!
Cows Gone Coconut
offers, clean, non-dairy frozen dessert flavors that are free of dairy,
gluten, soy, and eggs. Their products are also cholesterol free,
Paleo-friendly and 100% plant based. Flavors such as Chocolate, Vanilla
Bean, Decaf Coffee, Coconut, Ginger Honey, Mint Chip, and Strawberry
are developed with real foods and pure extracts. Lindsay avoids
"natural flavorings" which can be hard to trace and can
contain very strange and unpleasant ingredients. Without using
chemicals, natural or artificial flavors, or excessive stabilizers, the
base formula of Cows Gone Coconut replicates a taste profile similar to
gelato with a texture and mouthfeel that mimics super-premium ice
cream.

In addition to the perfect pint size, Cows Gone Coconut
just started offering restaurants, scoop shops, coffee shops and other
retail food outlets the ability to serve scoops via 1.5 gallon and 3
gallon buckets, available in all flavors including the seasonal &
artisan lines. This summer/fall watch for Strawberry Lemonade, Colorado
Peach and Local Pumpkin Pie seasonal flavors. New artisan Cows
Gone Coconut flavors will roll out soon, incorporating other local
Colorado food products into the non-dairy frozen dessert.
Sustainability
is a major part of what Cows Gone Coconut
does from practicing recycling and composting, to supporting the
community both by buying local and donating to charitable causes. They
spend time examining how food systems will exist in the future and
incorporate that vision into their strategic plan.
