Beth Conrey,
(also known as Beth's
Bees)
is the creator of Bee
Squared amazing local honey and beeswax products produced
here in Berthoud, CO.
Beth began in
the food industry and transitioned
to keeping bees
for over the past decade, starting with 2 initial hives which have now
grown to 60 active hives located throughout Boulder, Larimer and Weld
Counties. From these hives, Beth produces comb, clover, orange blossom
and wildflower honey.
Clover honey is
very light in appearance and is produced anywhere clover can be found.
The 2013 Bee Squared clover
honey crop traces back to the San Luis Valley of Colorado. Clover honey
is the American "standard" and is commonly found on store
shelves. With a neutral flavor, clover honey is attractive for baking
or food pairings, where you would like the flavor to complement the
other ingredient--not overwhelm it.
Orange blossom honey is made from the nectar of orange
blossoms. It is produced primarily in Florida and California, and
therefore is quite a specialty when produced here in Colorado. Orange
blossom honey has a nice body, noticeable citrus overtones and is
outstanding paired with fruits. On her website, you can find a diverse
collection of Beth's honey recipes including Buttermilk Waffles with
Oranges and Orange Blossom Honey Whipped Cream.
Wildflower honey is a Colorado specialty with the primary floral component being alfalfa.
This darker honey has a distinctly floral flavor and a full body with
fabulous "mouth feel". It is an outstanding product for
baking, as well as a great addition to beverages of all sorts.
Beth just so happens to drink 1 Tablespoon of honey in her morning
coffee and 1 Tablespoon in the evening before bedtime, to maximize
health benefits.
Locally produced honey is better for you and for our
environment. Besides the amazing taste, local raw honey contains pollen
specific to Colorado and therefore can help build defenses against
local seasonal allergies.
Honey bees are incredibly willful and survive the winter by feeding on
their own honey and by forming a "winter cluster," which
generates enough heat to keep them from freezing. In Colorado, bees
begin to swarm again as spring emerges. These "survivor bees"
are crucial to our environment's health and must be protected in order
to continue the cycle of honey production. A "swarm hotline"
is available if help is needed transferring these bees safely to a
suitable new home. Celebrating it's 125th anniversary of incorporation,
the Colorado State
Beekeepers Association (which Beth is the president of!) is always
on call and ready to help.
In 2013, Bee Squared added a
line of all natural soaps. Plans are in the works to trademark their
logo, as well as to finalize the packaging of their extensive line of
hand-rolled beeswax candles, in 2014.
