
Proudly celebrating 30 years in business, Pappardelle's is
certainly no new kid on our block. They are however the most
robust pasta company who tirelessly continues to innovate new flavors
of this staple ingredient to happily fill our bellies.
Pappardelle's was
a true tastemaker in the pasta industry, being the first company in
the US to infuse flavor through herbs, spices and vegetables into
their pasta, back in 1984. What started as 6 base flavors under
the name "Pastabilities" has grown, today, to 120 different
flavors of pasta under the name "Pappardelle's." Because
they make everything in small, hands-on batches, it is easy and fun
for them to develop custom creations from area Chef inspirations,
culinary trends and requests from customers. Examples include Spicy
Thai, Lime Cilantro, Lemon Ginger, Sweet Potato and Dark Chocolate.

Pappardelle's
state-of-the-art 20,000 sq ft manufacturing facility is located in Denver,
CO. Jim, the owner of Pappardelle's, spent countless hours
designing a layout to allow for optimal efficiency, while preserving
Pappardelle's hands-on approach to making pasta. The result is two
circles of flow. The inner circle for fresh frozen products and the
outer circle for dry pastas. For their delicious line of Gluten
Free pastas, they make all dried GF pasta on a GF dedicated
production line: including pasta machines, drying racks and drying
rooms.
Stringently adhering to "old-world" Italian pasta making
techniques, Pappardelle's uses
only durum semolina wheat (never all purpose flour). Bronze
dies are used to form the pasta, resulting in a coarser noodle that
holds its sauce and feels luxurious on the palate. In order to
preserve the flavor and nutritional components, Pappardelle's slow
dries long- and short-cut pastas at no higher than 95 degrees over a
closely monitored 2-4 day drying period.
How is all of this accomplished? In large part,
it's due to having highly dedicated, skilled employees in
place! Each and every one of their ravioli fillings are made in
small batches, by hand, by the same caring person who has been making
them for over 15 years. Pappardelle's
pasta makers have an intimate knowledge of every step of the
time-honored tradition of making pasta and it takes well over a year to
become crowned a master dough maker here.

Pappardelle's works
to source raw materials from local companies and growers, which
reduces food miles and keep dollars local. Through extensive
community involvement such as their support of Cherry Creek School
District's Transition Center, Pappardelle's donated over 7,000 pounds
of pasta in 2013.
Soon available, are seasonal flavors including: Hatch
Green Chile Pappardelle, Autumn Harvest Orzo (Chestnut, Pumpkin,
& Sage), Savory Pumpkin Ravioli and Bavarian Herb Rye Fusilli (in
honor of Oktoberfest). If these flavors have not yet sparked
