Here at Source Local Foods we have partnered with some really great local companies. Three of those are Frontiere Natural Meats, Innovative Foods and Mountain States Poultry.
Frontiere
is a local Longmont company that sells Angus Natural Beef, Certified
Grass fed Organic Beef, and Natural Bison. One of the unique aspects of
their Angus Beef and Bison are that both of these products are free of
GMO grains. GMO is going to be a very hot topic in the coming years and
customers are going to be asking the question, "Is this meat GMO free"?
We are already there with Frontiere, so order this in-demand,
high-quality beef and bison for your customers today!
Innovative
Foods, a local Evans Colorado company is run by a husband and wife team
who are some of the nicest folks around. Dave has over 30 years of
experience in the meat business and knows everything you'd ever want to
know about meat. But it is the co-op that he established with a group of
local Colorado Berkshire producers that has us really excited.
Berkshire Pork is hands-down the best pork you can buy -- throw in the
fact that it is a 100% local Colorado product and you can't go wrong!
This item is available weekly, but the supply is limited so get your
order in now.
Mountain
State Poultry from Wellington CO is run by a small partnership of
family and friends. They too are running a co-op with several chicken
growers. This product is all naturally-raised with outdoor access for
all the birds. The company also supplies each grower with the feed and
chicks so the product is very consistent and always flavorful -- think
Grandma's backyard chicken coop kind of flavor. The company also has one
of the cleanest facilities we have ever seen in Colorado and is poised
to grow as the word spreads about this product!
Speaking
of meat, our newest addition to the SOURCE Family is Rich Hamlin, Meat
& Protein Manager. Affectionately called "The Meat Guy", Rich
brings extensive natural meat industry and culinary experience to SOURCE
Local Foods. With a background that includes experience as a sous chef,
Rich has many creative recipes to offer, including the delicious prime
rib roast listed below.

Boneless Prime Rib Roast 1 Boneless Roast Ready Rib about 12/lbs 1 cup kosher Salt 1 cup ground Black Pepper 1 cup granulated garlic ½ cup sweet paprika (smoked if you like) ½ cup turmeric ½ cup ground rosemary ½ cup ground thyme Mix all the ingredients together and rub on the roast all over, press hard, do not trim off fat. Heat
oven to 500 degrees, put roast on an elevated rack with pan, fat cap
up. Cook for 30 minutes until roast browns to dark color. Turn oven down to 225 and cook until internal temperature reaches 120 degrees, this will be medium rare, use a meat thermometer. Remove
from oven and tent with foil, let rest for 15-20 minutes. Strain pan
juices into fat separator, taste for seasonings, serve as au jus side. Enjoy! |
